Flourless Thumbprint Breakfast Cookies (Press the cookie)
Ingredients: 2 cups rolled oats, 1 cup mashed ripe banana, 3 tbsp chia seeds or ground flaxseed, 1 tsp cinnamon, 1/8 tsp fine grain sea salt, 8 tsp jam, and peanut butter.
Cooking Method: Preheat the oven at 350F. Line a baking sheet with parchment paper. Add oats in a food processor and pulse until a coarse meal form is attained. Take a large bowl, add mashed bananas, processed oats, cinnamon, salt, and chia seeds in it and stir. With the help of an ice-cream spoon, scoop the dough into 10 mounds. Press your thumb in the center of the mound. Fill the hole with a tsp of jam of your choice, preferably raspberry. Bake the cookies in the oven for 11-13 minutes.
